Directions

  1. 1Cook 2 pounds of ground beef.
  2. 2Strain the excess fat from the ground beef; it needs to be very lean to get crispy meat.
  3. 3Put the cooked ground beef in the oven to dehydrate at 350 Fahrenheit (or 300 F as per description) for about 4 hours, sticking a wooden spoon in the oven for proper circulation.
  4. 4Grind the dehydrated meat with a food processor until small and crumbly.
  5. 5Put the ground beef into a glass baking dish.
  6. 6Melt your grass-fed and finished tallow.
  7. 7Add 5 teaspoons of raw honey and a hefty pinch of mineral salt to the melted tallow, tasting as you go.
  8. 8Pour the honey, tallow, and salt mixture over the crispy beef.
  9. 9Use a wooden spoon to ensure all the beef is submerged well under the tallow.
  10. 10Add dehydrated strawberries (or other freeze-dried fruit) if desired.
  11. 11Let them sit in the fridge for a few hours until they get hard.
  12. 12Cut and wrap each bar individually with parchment paper and tie it with a little bow.

Tips

  • For proper circulation during dehydration in an oven, stick a wooden spoon in the oven door.
  • The homemade bars are not 100% shelf stable due to a little moisture in the beef.
  • These bars are good for travel.
