Caramelized Honey-Ginger Sirloin Stir-Fry with Vibrant Greens

Directions

  1. 1Pat the sirloin dry and slice it thinly against the grain. Place in a bowl and toss with cornstarch, sesame oil, soy sauce, black pepper, and salt.
  2. 2Whisk together honey, soy sauce, rice vinegar, grated ginger, minced garlic, and red pepper flakes in a small bowl.
  3. 3Heat a wok or heavy skillet over medium-high to high heat. Add half the oil.
  4. 4Add beef in a single layer and cook for 1 to 2 minutes per side until browned, working in batches. Transfer beef to a plate.
  5. 5Add remaining oil to the pan. Stir-fry bell pepper and snap peas.
  6. 6Add baby spinach and most of the sliced green onions. Stir-fry until greens wilt.
  7. 7Return beef to the pan and toss.
  8. 8Pour the sauce around the sides of the hot pan and toss to coat.
  9. 9Cook for 1 to 2 minutes until the sauce is bubbly and glossy.
  10. 10Remove from heat and sprinkle with remaining green onions and sesame seeds.
