Chicken and mushroom stir fry

Directions

  1. 1Cut the chicken into thin slices and marinate it with soy sauce, cornstarch, sugar, and cooking oil. Mix well and set aside for 15 minutes.
  2. 2Slice the onions and mushrooms. Finely chop the ginger and garlic. Cut the spring onions into 2 inch pieces and slice the red chilies.
  3. 3Prepare the sauce by mixing regular soy sauce, dark soy sauce, oyster sauce, water, sugar, and cornstarch until dissolved.
  4. 4Over medium-high heat, drizzle oil and stir fry the onions first, then add the mushrooms and cook for 1 to 2 minutes. Set them aside.
  5. 5In the same pan, drizzle more oil, add the marinated chicken slices, and let sear at the bottom for 1 to 2 minutes. Add the minced garlic and ginger, stir well, and cook until the chicken is 80% done.
  6. 6Pour the sauce into the pan.
  7. 7Add the fried mushrooms and onions back to the pan and combine everything.
  8. 8Finish with chili slices, spring onions, and a drizzle of sesame oil. Give it a final quick toss.
