Mix 1 1/2 cups of all-purpose flour with 1 teaspoon of salt and 1/4 cup of oil.

Mix the oil in with your hands until well combined.

Add 1/2 cup of boiling water to the mixture, adding more if the dough looks dry, until the dough is soft and a little sticky.

Turn the dough out onto your counter and knead for 5 minutes, resisting the temptation to add more flour.

Cover the dough and let it rest for 15 to 20 minutes.

Cut the dough into 8 even pieces for 8-inch tortillas (or 6 pieces for 10-inch, 10 pieces for 6-inch).

Form the pieces into tight dough balls and keep them covered to prevent drying out.

Working one at a time, roll out each tortilla using plenty of flour to help keep a round shape. A ruler can be used for consistent sizing.

Preheat a dry skillet over medium-high heat.

Cook each tortilla for 20 to 30 seconds on the first side until small bubbles form.

Flip the tortilla and cook for another 20 to 30 seconds on the other side until lightly browned.

Transfer the cooked tortillas into a towel to keep them warm while you finish cooking the rest.
