Bring a large pot of water to a boil.

Add 1 pound of haricot verts (French green beans) to the boiling water.

Cook the green beans for exactly 3 minutes.

Remove the green beans and strain them completely.

Place a pan on high heat.

Add 2 tablespoons of olive oil to the hot pan.

Add the blanched green beans to the pan.

Sauté the green beans for only 1 to 2 minutes.

Push all the green beans to one side of the pan.

Add 4 cloves of finely minced garlic to the empty side of the pan.

Add 1 tablespoon of unsalted butter to the garlic.

Once the garlic is cooked, mix it all together with the green beans.

Briefly set the pan aside.

In a small bowl, add 1 teaspoon of Dijon mustard.

Add 1 1/2 tablespoons of soy sauce to the mustard.

Mix until it's completely combined to create the dressing.

Dress the green beans with the prepared sauce.

Squeeze the juice of one-half lemon over the green beans.

Season to taste with coarse salt.

Season to taste with fresh cracked black pepper.

Give the green beans a good stir.

Serve the sautéed green beans.
