Strawberry Cheesecake

Directions

  1. 1Blend three packs of gram crackers with honey roasted pecans and 1/4 to 1/2 cup of white granulated sugar in a food processor.
  2. 2Add a little butter to bind the crust mixture together until it holds its shape when squeezed.
  3. 3Spray a spring form pan with baking spray.
  4. 4Press the crust mixture evenly onto the bottom and up the sides of the pan.
  5. 5Bake the crust in the oven at 350 degrees for about 10 minutes.
  6. 6Start with four blocks of room temperature cream cheese for the filling.
  7. 7Add sour cream, a pinch of salt, and scrape the vanilla from half of a vanilla bean (or use vanilla extract).
  8. 8Add flour and eggs to the filling mixture and mix until smooth and silky, making sure to scrape the bottom and sides of the bowl.
  9. 9Bake the cheesecake at 300 degrees for 50 minutes.
  10. 10For the strawberry filling, boil fresh strawberries in a pot until they soften.
  11. 11Mash the softened strawberries and add a little sugar (and optionally vanilla).
  12. 12Evenly layer the strawberry filling on top of the baked cheesecake.
