Spicy Cucumber Margarita

Directions

  1. 1Slice the jalapeño into rounds.
  2. 2Add jalapeño slices and agave to a small saucepan over medium heat.
  3. 3Bring to a simmer for a minute or two, then remove from heat and let sit for 30 minutes to cool before straining out the jalapeño.
  4. 4Peel and dice the cucumber.
  5. 5Blend the diced cucumber until smooth to make cucumber juice.
  6. 6Strain the cucumber juice through a fine mesh sieve and discard the pulp.
  7. 7Strain the jalapeño-infused agave to remove the jalapeño slices.
  8. 8Moisten the rims of two glasses with a lime wedge, then coat in the salt and lime zest mixture and fill with ice.
  9. 9Add cucumber juice, lime juice, tequila, orange liqueur, and jalapeño infused agave to a cocktail shaker filled halfway with ice.
  10. 10Shake well for 10 seconds.
  11. 11Strain the mixture into the rimmed glasses.
  12. 12Garnish with a cucumber ribbon and/or a jalapeño slice.

  • 1 jalapeño, sliced into rounds
  • 4 oz cucumber juice
  • 1 large cucumber
  • 4 mini cucumbers
  • 2 oz freshly squeezed lime juice
  • 3 oz tequila
  • 1 oz orange liqueur
  • 1.5 oz jalapeño infused agave
  • 1 tbsp kosher salt
  • 1 zest from lime
  • ice

Tips

  • For a less spicy cocktail, use less jalapeño in the agave infusion.
  • Fresh cucumber juice makes all the difference in flavor, as does freshly squeezed lime juice for tartness.
