Slice the peeled sweet potatoes into approximately half-inch chunks.
Rinse the sliced sweet potatoes.
Add the rinsed sweet potatoes to a pot.
Add butter, sugar, brown sugar, nutmeg, cinnamon, vanilla extract, and salt to the pot with the sweet potatoes.
Put the pot on low heat and let the sweet potatoes cook until they are fork-tender.
Alternatively, place the sweet potatoes in a baking dish and layer them with brown sugar, regular sugar, butter, cinnamon, nutmeg, vanilla, salt, and orange juice.
Cover the baking dish loosely with foil and bake in a 375-degree oven.
After about 30 minutes, collect some of the leftover juice from the baked sweet potatoes.
Pour the collected juice into a saucepan.
Add a little bit of cornstarch to the juice in the saucepan and mix it all up.
Cook the mixture in the saucepan until it gets nice and thick to create the glaze.
Pour the glaze all over the candied sweet potatoes after they come out of the oven and are fork-tender.
