Cheesecake Crumble Bars

Directions

  1. 1Preheat oven to 350 and line a 9x13 with parchment paper.
  2. 2In the bowl of an electric mixer, combine flour, sugar, baking powder, salt, and lemon zest using the paddle attachment.
  3. 3Mix until combined.
  4. 4Add margarine and vanilla and mix.
  5. 5Add egg while the mixer is running and mix until the margarine completely broke apart.
  6. 6Press 2/3 of the mixture at the bottom of your 9x13 and save the other third in the fridge.
  7. 7Poke holes using a fork then bake for 10 minutes.
  8. 8While it bakes, prepare your cheesecake mixture in a mixer fitted with a whisk, beat cream cheese at a low speed while adding the sugar gradually.
  9. 9Let the mixer run while slowly adding the vanilla, eggs, sour cream and salt.
  10. 10Pour the mixture directly on the par-baked crust.
  11. 11Scatter the fruits and add your remaining crumble mixture, slightly tighten it in your hand to create bigger crumbs.
  12. 12Bake for 35-40 minutes, it should not be jiggly when baked.
  13. 13Refrigerate for at least 4 hours or overnight before cutting it.

  • 2 large eggs, beaten
  • 0.5 cup sour cream
  • 0.25 tsp salt
  • 0.5 cup blueberries
  • 0.5 cup chopped strawberries
