12Let the pot boil for about 30 minutes or till the chicken is fully cooked.
13Place the chicken on a baking tray, brush it with some of the stock, and broil it in the oven for a nice color.
14Wash and soak two cups of the best basmati rice you can find for about 30 minutes.
15To make the famous daqoos, blend a couple of tomatoes with an onion, a few spicy chilies, some garlic, a peeled lemon, a nice bunch of fresh mint, a good pinch of salt, a teaspoon of coriander powder, and half a teaspoon of cumin powder.
16Blend it into a chunky consistency.
17Once the rice has doubled in size, add the rice to the pot with two cups of water.
18Add the zest of another orange.
19Let it boil for about 6–7 minutes.
20Drop the heat to the lowest possible, cover, and let it cook for 20 minutes.
21Keep the lid shut for another 20 minutes after you switch off the heat.
22Drop the rice on a serving plate and fluff it up a bit.
23Lay the chicken halves on their bed.
24Garnish with optional nuts fried in authentic ghee.
