3Shred about 1/2 cup of your cheese (mozzarella or parmesan).
4In a big pan, on medium heat, add olive oil and drop in your sausage.
5Add your seasonings: salt & pepper, paprika, garlic powder, onion powder, creole seasoning, chile powder, parsley.
6Cook for about 3 minutes each side, remove, and put aside.
7In a big pot of boiling water, add your pasta of choice, and cook until al dente.
8In the same pan, add 2 tablespoons of butter, add your peppers and minced garlic, and sauté for 2-3 minutes.
9Add in 1 1/2 cup of heavy cream and bring it to a slow simmer.
10Add another round of seasonings.
11Add your cheese.
12Add your pasta, straight from the pot. And I used about a 1/3 cup of mozzarella cheese (doing this incorporates the pasta water, if sauce is too thick, you can add 1/4 cup of pasta water).
13Finally, mix in your sausage & top off with parsley & more cheese. Enjoy!

Tips
Add cheese little by little so it doesn't clump.
