Add a little olive oil to a soup pot over medium heat.

Whisk the flour into the mixture to create a roux and cook for a couple of minutes to knock out the raw flour taste.

Pour two cups of chicken stock into the pot.

Add three cups of milk to the pot and bring the mixture to a light boil, continuing to whisk to prevent burning or sticking.

Put on a glove to handle the hot potatoes.

Halve the cooked potatoes, then halve them again lengthwise, and finally cut them into bite-sized pieces.

Season the soup with salt and pepper.

Add a smidge of parsley to the soup.

Add a 16-ounce block of Velveeta cheese, cut into cubes, to help it melt faster and give the soup a thick creamy texture.

Add 3/4 cup of sour cream to the soup.

Add 4-6 strips of cooked, chopped bacon to the soup.

Turn off the heat once all the cheese is good and melted.

Fold the cooked potatoes into the soup to keep their integrity.
