Steak & Guinness Crumpet Pie

Directions

  1. 1Sprinkle flour, salt and pepper over 1kg diced beef.
  2. 2Sear beef in batches until browned in a large, heavy based pan.
  3. 3Fry off 1 large diced white onion and 6 grated garlic cloves until softened.
  4. 4Add 300g of sliced/diced mushrooms (optional).
  5. 5Add 2 tbsp tomato puree and 50ml balsamic vinegar and cook until the tomato puree deepens in color.
  6. 6Add the cooked beef, 300ml beef stock, 1 can of Guinness, 1-2 tsp marmite, and 2 tsp rosemary (add thyme if you like).
  7. 7Bring to a boil, scrape the bottom of the pan, then simmer for an hour, stirring every 20 minutes and adding more liquid if needed.
  8. 8Transfer the mixture to an oven-proof dish and let it cool.
  9. 9Chop 4-6 crumpets into cubes.
  10. 10Sprinkle crumpet cubes over the filling.
  11. 11Brush with melted butter mixed with garlic granules and rosemary.
  12. 12Bake at 180 for 10-15 minutes until bubbly and golden brown.

  • 1 can Guinness
  • 1 tsp marmite
  • 2 tsp rosemary
  • 1 tsp thyme
  • 4 crumpets
  • 1 butter
  • 1 garlic granules
  • 1 rosemary
