Directions

  1. 1Place pressure cooker on gas and add oil.
  2. 2Add whole spices: shahi jeera, kali mirch, dalchini, star anise, laung, elaichi.
  3. 3Add 70% of sliced onions and mix well.
  4. 4Cook onions on low flame until translucent.
  5. 5Add ginger-garlic paste and mix well. Cook on low flame until raw smell goes away.
  6. 6Add washed and drained mutton and cook for 1 minute on medium flame. Then lower flame.
  7. 7Add salt according to taste and mix well.
  8. 8Add chopped tomatoes and mix well.
  9. 9Add water(1 glass). Mix and cover to cook on high flame for 1 whistle and then on low flame for 2-3 whistles.
  10. 10Prepare the dry masala: haldi, dhaniya powder,zeera powder, Kashmiri lal mirch powder, mutton masala. Mix with 0.5 glass water.
  11. 11Heat oil in a pan or wok. Add tejpatta and 4 sukhi hui teekhi lal mirch.
  12. 12Add remaining sliced pyaaz and mix. Cook on low to medium flame until golden brown.
  13. 13Add 1 tablespoon ginger-garlic paste and cook on low flame until raw smell goes away.
  14. 14Add the prepared dry masala along with the water to the pan.
  15. 15Mix well and cook on medium to high flame until the water evaporates and oil separates.
  16. 16Add salt to taste and mix well.
  17. 17After releasing the pressure from the pressure cooker, add the cooked mutton pieces to the pan with masala. Mix well.
  18. 18Mix the mutton and masala well on medium to low flame for 3-4 minutes.
  19. 19Add the reserved mutton juices from the pressure cooker and mix well. Cook on low flame for 3-4 minutes without covering.
