1Boil water, salt it and add one pound of cavatappi pasta. Boil for eight minutes if making mac and cheese right away, or seven minutes if making it the night before.
2Shred one pound of mozzarella, one pound of Colby jack, and eight ounces of sharp cheddar cheese.
3In a bowl mix seasoning: salt, pepper, garlic powder, and paprika.
4In a pan, melt three tablespoons of butter and add half of the seasoning. Cook for 30 seconds.
5Add three tablespoons of flour and cook for two to three minutes.
6Add a quarter of a can of evaporated milk and whisk to remove lumps.
7Add the rest of the evaporated milk and whisk for a minute.
8Add one tablespoon of Dijon mustard (optional) and mix.
9Slowly add two cups of heavy cream, a little at a time, while whisking.
10Add half of the shredded cheese, mixing until melted. Add the rest of the cheese and seasoning, then mix until melted.
11Add the cooked pasta and fold it in with the cheese sauce.
12Pour half of the mac and cheese into a baking dish, layer with half of the remaining cheese, top with the other half of mac and cheese and sprinkle with the rest of the cheese.
13Bake at 350 for 25-30 minutes until the top cheese is melted. Broil for two minutes.
