Grandma's 7UP Cake
Directions
- 1Preheat your oven to 335 degrees Fahrenheit.
- 2Grease and lightly flour a large Bundt cake pan.
- 3In a large bowl, add the granulated sugar.
- 4Zest one lemon into the sugar.
- 5Mix the sugar and lemon zest well to create lemon sugar.
- 6Add softened unsalted butter to the mixture.
- 7Mix well with a hand mixer or stand mixer to combine.
- 8Add vanilla extract and lemon extract.
- 9Add lemon juice to the mixture.
- 10Add eggs to the mixture.
- 11Mix well again until everything is combined.
- 12Add salt and all-purpose flour to the batter.
- 13Mix until well combined.
- 14Pour in the 7UP soda.
- 15Beat until the cake batter is fully combined.
- 16Pour the batter into the greased Bundt pan.
- 17Even out the batter in the pan with a spatula.
- 18Bake for about 1 hour up to an hour and 20 minutes, until the cake is fully cooked.
- 19Cool the cake for at least 20 minutes before flipping it out of the Bundt pan.
- 20To make the glaze, add powdered sugar and vanilla extract into a bowl.
- 21Whisk in 7UP a couple tablespoons at a time until a thick, shiny glaze forms.
- 22Once the cake is cooled to the touch, add on your glaze.

- 3 cups granulated sugar
- 1 lemon
- 1.5 cups unsalted butter, room temp
- 1 TB vanilla extract
- 1.5 TB lemon extract
- 5 eggs, room temp
- 3 cups all purpose flour
- 1 pinch salt
- 0.75 cup 7UP soda
- 2 cups powdered sugar
- 0.5 tsp vanilla extract
- 2 TB 7UP soda
- 3 TB 7UP soda

Tips
- Cool the cake for at least 20 minutes before flipping out of the Bundt pan.
- If your cake is having issues coming out, try running a small knife around the edges to help release the cake.
- The cake tastes BEST after it’s cooled COMPLETELY, about 4-6 hours after coming out of the oven. When it’s warm, it just doesn’t have the same flavor or texture. It’s worth waiting!
