Directions

  1. 1Preheat your oven to 335 degrees Fahrenheit.
  2. 2Grease and lightly flour a large Bundt cake pan.
  3. 3In a large bowl, add the granulated sugar.
  4. 4Zest one lemon into the sugar.
  5. 5Mix the sugar and lemon zest well to create lemon sugar.
  6. 6Add softened unsalted butter to the mixture.
  7. 7Mix well with a hand mixer or stand mixer to combine.
  8. 8Add vanilla extract and lemon extract.
  9. 9Add lemon juice to the mixture.
  10. 10Add eggs to the mixture.
  11. 11Mix well again until everything is combined.
  12. 12Add salt and all-purpose flour to the batter.
  13. 13Mix until well combined.
  14. 14Pour in the 7UP soda.
  15. 15Beat until the cake batter is fully combined.
  16. 16Pour the batter into the greased Bundt pan.

Tips

  • Cool the cake for at least 20 minutes before flipping out of the Bundt pan.
  • If your cake is having issues coming out, try running a small knife around the edges to help release the cake.
  • The cake tastes BEST after it’s cooled COMPLETELY, about 4-6 hours after coming out of the oven. When it’s warm, it just doesn’t have the same flavor or texture. It’s worth waiting!
