1Press the tofu for around 20 minutes to remove excess liquid.
2Slice the tofu blocks in half lengthwise.
3Carefully score the top of the tofu in a cross stitch pattern.
4In a container, combine soy sauce, dijon mustard, maple syrup, apple cider vinegar, paprika, minced garlic, and orange zest to create the marinade.
5Transfer the tofu to the container and cover it with the marinade using a brush. Allow to set for at least an hour, up to overnight in the fridge.
6Preheat the oven to 375F.
7Remove the tofu from the marinade and transfer it to a parchment-lined baking sheet.
8Add cloves into the cross-stitch connecting points of the tofu and bake for 20 minutes until browned slightly.
9While the tofu bakes, prepare the glaze by combining maple syrup, water, molasses, dijon mustard, cinnamon, balsamic glaze, and orange juice in a small saucepan.
10Bring the glaze to a simmer until thickened slightly.
11Remove the tofu from the oven and liberally cover it with the glaze using a brush.
12Place the tofu back in the oven for 15 to 20 minutes until caramelized on the outside.
