Sheet Pan Breakfast Burritos: Maple Bacon Hashbrown

Directions

  1. 1Add 10 slices of center-cut bacon to your sheet pan and toss them in the oven to bake at 400 degrees Fahrenheit for 20 minutes until perfectly golden brown and crispy.
  2. 2Remove the cooked bacon and remove excess grease from the pan.
  3. 3Layer over 600g of store-bought uncooked shredded hashbrowns, season with salt and pepper.
  4. 4Add the hashbrowns to the oven at 400 degrees Fahrenheit for 20 minutes to cook until they're golden brown and crispy.
  5. 5While the hashbrowns cook, crumble up your cooked bacon.
  6. 6Add the crumbled bacon to a bowl, add in diced Canadian bacon, a little bit of maple syrup, garlic and thyme.
  7. 7Give the mixture a mix.
  8. 8Top the layer of hashbrowns with your maple bacon mixture.
  9. 9Pour over a blended mixture of 4 eggs, 450g of egg whites, and 300g of cottage cheese, and 12g of corn starch.
  10. 10Season with salt and pepper and then top off with 60g of sharp cheddar cheese.
  11. 11Toss that in the oven at 400 degrees Fahrenheit for 25-30 minutes, or until the center is firm and the top is lightly browned.
  12. 12Go ahead and slice it into 10 evenly sized pieces.
  13. 13Add the pieces to a burrito-sized tortilla with a high-protein cream sauce, which is made of 400g of fat-free Greek yogurt, 50g of hot sauce of choice, garlic, salt and pepper to taste.
  14. 14Give it a roll.
