Honey Glaze Salmon Bowls with Peach Salsa and Chipotle Sauce

Directions

  1. 1Cut your salmon into little bite-size cubes.
  2. 2Place the salmon in a bowl.
  3. 3Add avocado oil to the salmon.

Tips

  • The outside of the salmon gets nice and crunchy and it stays soft in the middle.
  • The peach salsa screams summer.
  • You can use leftover chipotle sauce as a salad dressing during the week.
  • The chipotle sauce is optional, you can buy chipotle mayo from the grocery store instead or omit it.
  • The recipe calls for a foil-lined baking sheet, but parchment paper can also be used as an alternative.
  • Cook rice and set that aside too before making the salsa and the sauce.
  • To make the chipotle sauce, add all the ingredients to a small blender and blend until smooth.
  • To assemble the bowls, put rice on the bottom, then the salmon, peach salsa and chipotle sauce.
