1Combine chicken and potatoes in a large baking dish with poultry seasoning or paprika, onion powder, garlic powder, oregano, a drizzle of olive oil, and salt.
2Bake uncovered at 200°C for 30 minutes.
3Smash garlic with salt in a mortar and pestle until a paste forms.
4Add the garlic paste to a jug with olive oil, lemon juice, and water.
5Whisk the sauce until well combined.
6Remove the chicken from the oven and pour the sauce over it.
7Turn the chicken and potatoes to coat them well, ensuring the skin side of the chicken is facing up.
8Reduce oven temperature to 180°C.
9Place the tray back in the oven (middle shelf) for 45-60 minutes, or until the chicken is cooked and nicely browned.
10Garnish with parsley and lemon wedges.
11Serve with Lebanese bread and salad.
