Start by melting a half a stick of unsalted butter.
Add a quarter cup of grated onions, being less aggressive.
Add a teaspoon of mustard powder, a teaspoon of garlic powder, a teaspoon of smoked paprika, a teaspoon of cayenne, a teaspoon of black pepper, and a tablespoon of Worcestershire sauce.
Stir that in real quick.
Add four tablespoons of flour.
Slowly mix it until it combines.
Cook it for about a minute.
Whisk in three cups of whole milk.
Keep whisking until it's beautifully combined.
Add one pound of shredded white American cheese, a half pound of medium cheddar, and a half pound of sharp cheddar.
Stir that in until the cheese is all combined, melty, and gooey.
Once it is, add 16 ounces of cooked pasta (large elbow macaroni or cavatappi).
Stir that in until all the noodles are completely covered.
Get a baking dish and fill it up.
Get a handful of cheese, crush them in your bare hand, and sprinkle them out on a layer.
Sprinkle cheddar jack on top if you have it.
Throw it in the oven at 400 degrees for 20 minutes.
When it comes out, it's going to be beautiful and molten lava hot.
Feel free to blow on it to cool it off.
Once it is cool, grab a spatula and cut a piece.
Fill up a bowl with the mac and cheese.
Get a fork, scoop up a big old bite, and put the whole thing in your mouth.
