Creole Jambalaya

Directions
- 1Cut up your andouille sausage.
- 2Lay out chicken on a different cutting board and season it with paprika, garlic powder, salt, and pepper.
- 3Chop up your holy trinity of onions, bell pepper, and celery and set aside.
- 4Brown the sausage, then take it out of the pan.
- 5Add the chicken to the pan and cook it up on both sides.
- 6Chop up the chicken and add it in with the sausage, then set aside.
- 7Sauté the vegetables in the drippings in the pan.
- 8Add garlic paste, tomato paste, crushed tomatoes, and Cajun seasoning to the vegetables and mix everything together.
- 9Add chicken stock.
- 10Add the proteins (sausage and chicken) back into the pan.
- 11Add some hot sauce if desired and bay leaves.
- 12Bring the mixture to a boil, then reduce it to a simmer and cover it up.
- 13Add in your rice and bring it back to a boil, then again to a simmer.
- 14Cover it up and let the rice soak in all the flavor, then mix it up.
- 15Remove your bay leaves.
- 16Top with some fresh green onion and toss it up.
- 17Plate it up.
