Slice a bunch of onions thinly.

Heat a pan with butter.

Toss in the sliced onions and stir frequently until caramelized, which takes about 40 minutes.

Toss the caramelized onions in a bowl.

Add olive oil, egg yolks, a bunch of parmesan, salt and pepper to the bowl.

Blend the ingredients in the bowl with an immersion blender.

Add roughly a cup of water throughout the blending process to thin it out.

Boil pasta al dente.

Take the pasta straight out of the pot and into the pan with the sauce.

Give the pasta and sauce a good mix.

Garnish with fresh parsley.

0.5 cup Extra Virgin Olive Oil
4 Tbsp Butter
3 Egg Yolks
1 cup Water
0.75 cup Grated Parmesan Cheese
Salt
Pepper
Spaghetti
Fresh parsley

Tips
All it takes is just a little patience and this will be a weekly dish in rotation forever.
The sauce is amazing by itself. So eat it with everything.
I would also recommend adding the water in parts throughout the blending process, so you don’t get a runny sauce.
