Directions
- 1Rub the beef with seasonings.
- 2Brown the beef on all sides in a hot pan.
- 3Remove the browned beef from the pan.
- 4Chop the onion.
- 5Chop the garlic.
- 6Fry the onion and garlic in the pan.
- 7Add tomato paste.
- 8Add sugar.
- 9Pour in beef stock.
- 10Add bay leaves and thyme.
- 11Return the browned beef to the pot.
- 12Cover and roast in the oven.
- 13Chop the carrots.
- 14Wash the baby potatoes.
- 15Remove the pot roast from the oven.
- 16Add carrots and potatoes to the pot roast.
- 17Cover and cook again.
- 18Mash potatoes using a potato ricer.
- 19Add butter and milk to the mashed potatoes.
- 20Stir to create creamy mashed potatoes.
- 21Remove the pot roast from the oven when tender and ready.
- 22Serve a scoop of mashed potatoes on a plate.
- 23Place a piece of pot roast on top of the mashed potatoes.
- 24Spoon the carrots and potatoes with gravy over the pot roast.
- 25Garnish with chopped parsley.
