Mix the flour into the crumble topping with your hands until incorporated and crumbly.

Cream together softened butter and sugar in a mixer or a large bowl.

Whisk eggs and vanilla extract together in a separate container.

Add the egg and vanilla mixture to the creamed butter and sugar.

Add sour cream to the batter.

Add flour, baking powder, baking soda, and salt to the batter.

Fold the dry ingredients into the wet ingredients using a spatula, bringing the bottom to the top without overworking the batter.

Crumple parchment paper and line the pans, then butter the parchment paper.

Spread about half of the coffee cake batter into the prepared pans.

Sprinkle a good layer of the crumble topping over the batter and gently press it in.

Add the remaining coffee cake batter over the crumb layer and spread evenly.

Top with more crumble topping and press gently into the batter.

Tips
Crumple parchment paper before lining pans for easier fitting.
Press the crumb topping into the batter to ensure layers stick together and to evenly spread the butter.
Coffee cake should have more crumb than cake.
