French Onion Pasta

Directions

  1. 1Heat oil in a casserole pan and add thinly sliced onions. Saute on low heat until softened.
  2. 2Add butter, salt, and pepper, and cook for another 20 minutes until onions turn golden brown.
  3. 3Add minced garlic, balsamic vinegar, and thyme to the pan and saute for 2 minutes.
  4. 4Stir in the plain flour, then add white wine to deglaze the pan and cook for 5-8 minutes until reduced.
  5. 5Pour in vegetable stock and add the uncooked pasta. Cover the pan and simmer.
  6. 6Stir in double cream until warmed through, then remove from heat and stir in grated cheese.

  • 1 large white onion, thinly sliced
  • 2 garlic clove, minced
  • 4 tbsp olive oil
  • 3 tbsp butter
  • salt (optional)
  • black pepper (optional)
  • 3 sprig fresh thyme
  • 1 tbsp balsamic vinegar
  • 80 ml white wine
  • 1.5 tbsp plain flour
  • 1 liter vegetable stock
  • 225 g dried pasta
  • 60 ml double cream
  • 60 g mature cheddar cheese
