Start by mixing together some curd, ginger garlic paste, a few basic spices mentioned in the caption, along with some salt and vinegar.
Use this to marinate boneless chicken thigh or breast for at least half an hour.
Meanwhile, blend together a couple of boiled egg whites, garlic cloves, a cheese slice, some vinegar, skim milk, salt and sugar and set this aside for later.
Spray or brush your frying pan with very little oil.
Add the chicken and then cook on a high flame for about 4 to 5 minutes on each side.
Lower the heat, cover, and cook for another 4–5 minutes until the masala thickens and forms a rich gravy base.
Drizzle that creamy garlicky sauce all over, cover and cook for about 3 minutes.
Finish it off with a sprinkling of chopped coriander leaves.
Serve it up with some kulcha or roti straight from the pan and just enjoy.
