Greek Lentil Salad (Dressing Marinade)

Directions

  1. 1In a large mixing bowl, whisk together 4 tablespoons extra virgin olive oil, 2 tablespoons red wine vinegar, 1 tablespoon Dijon mustard, 1 tablespoon honey, 1 teaspoon dried oregano, ½ teaspoon salt, and black pepper until smooth.
  2. 2Stir in 2 cans of drained and rinsed lentils, shaking off as much water as possible.
  3. 3Set aside the lentils to marinate while you prepare the vegetables.
  4. 4Chop 2 cups cherry tomatoes, 1½ cups cucumber, ½ red onion, ⅓ cup Kalamata olives, and 1 cup bell pepper.
  5. 5Add the chopped vegetables to the bowl with the marinated lentils and toss until combined.
  6. 6Crumble in 4 ounces feta cheese and give the salad a final toss.
  7. 7Transfer the salad to a serving bowl or platter.
  8. 8Serve right away, or cover and refrigerate to let the flavors meld even more.
