1Go to the store and get an onion (69¢), a green bell pepper (89¢), celery (98¢), garlic (72¢), your favorite cut of chicken ($7.62), your favorite smoked sausage ($6.46), chicken broth ($1.98), tomato paste (97¢), and crushed tomatoes ($1.96).
2Trim up the chicken, add olive oil, salt, and pepper. Set aside.
3Throw the sausage in a Magnalite and render the fat for extra flavor. Remove sausage with a slotted spoon.
4Add the chicken to the drippings, let it get some color, then remove and put with the sausage.
5Add the trinity of vegetables (onion, green bell pepper, and celery). The moisture from the vegetables should help deglaze the pan.
6Sauté until tender. Then, add in the garlic and tomato paste.
7Cook that down for another minute.
8Add all the meats back into the pot with their drippings.
9Add crushed tomatoes and chicken broth.
10Season with granulated garlic, granulated onion, and creole seasoning. Add bay leaves and let simmer on low for about 40-45 minutes. If you want a looser gravy, add more chicken broth.
