Pour warm milk, yeast, and sugar together in a big bowl and let it chill for about five minutes until it gets foamy on top.

Toss mashed bananas, salt, eggs, and melted butter into the yeast mix and stir everything really well.

Little by little, add flour while stirring so the dough clumps up nicely.

Move the dough to a floured spot and knead by hand for around 10 minutes until bouncy and smooth.

Transfer the kneaded dough to a greased bowl, flip it over, cover, and keep it somewhere warm for about an hour, letting it grow to twice the size.

While the dough is rising, mix soft butter with cinnamon and brown sugar in a bowl until it's spreadable.

Dust some flour on your counter and roll the dough out into a big rectangle — about 20x14 inches.

Slather on your filling, then scatter walnuts over top if you’re feeling it.

Once it's rolled up tight from the long side, slice the log into a dozen pieces.

Drop the slices into a greased pan, cut side up, leaving just a little space around each one.

Cover the pan and let the dough puff up for half an hour.

While you wait, preheat your oven to 350°F (175°C).

Slide the dish in the oven and bake about 25 to 30 minutes until they look nicely golden and the tops are a tad crisp.

Toss cream cheese, butter, powdered sugar, and vanilla into a bowl.

Beat them all together till you get a creamy texture.

Smear the icing on the rolls while they're still warm (but not super hot).

1 cup mashed banana (grab about 2 or 3 medium bananas)
4 cups all-purpose flour
1 teaspoon salt
2 large eggs
0.5 cup melted unsalted butter
0.5 cup granulated sugar
2.25 teaspoons active dry yeast
1 cup warm milk
0.5 cup chopped walnuts (toss these in if you like)
2 tablespoons ground cinnamon
1 cup brown sugar
0.5 cup unsalted butter, let it soften
0.5 teaspoon vanilla extract
1.5 cups powdered sugar
0.25 cup unsalted butter, let it get soft
4 oz cream cheese, room temp is best

Tips
You can freeze these either raw or baked and they’ll still taste awesome.
The bananas keep the rolls soft and squishy for days.
If you want them fresh in the morning, prep the dough the night before and pop them in the fridge for the last rise.
To make vegan, swap out milk, butter, and cream cheese icing for plant-based versions.
For a lighter roll with whole wheat flour, try half wheat and half white flour.
