Loaded Potato Gnocchi Soup

Directions

  1. 1In a pot, cook half a pack of bacon until crispy, then set aside.
  2. 2Remove half of the bacon grease from the pot and add 1 tablespoon of butter and 1 medium diced onion.
  3. 3Cook the onion for 3-5 minutes.
  4. 4Add 4 cups of chicken broth and 1.5 cups of heavy cream to the pot and bring to a boil.
  5. 5Once the soup boils, add the gnocchi and cook for 4 minutes, then turn off the heat.
  6. 6Season the soup with salt, pepper, paprika, onion powder, and garlic powder.
  7. 7Crumble the reserved bacon and add it into the soup.
  8. 8In a separate cup, mix 3 tablespoons of cornstarch with 3 tablespoons of water and add the mixture into the soup, mixing well.
  9. 9Gradually add 1.5 cups of shredded triple cheddar cheese and let the soup simmer on low heat for about 5-10 minutes, stirring consistently.
  10. 10Serve the soup, topping with more cheese, bacon crumbs, and green onion.
