In a pot, cook half a pack of bacon until crispy, then set aside.

Remove half of the bacon grease from the pot and add 1 tablespoon of butter and 1 medium diced onion.

Cook the onion for 3-5 minutes.

Add 4 cups of chicken broth and 1.5 cups of heavy cream to the pot and bring to a boil.

Once the soup boils, add the gnocchi and cook for 4 minutes, then turn off the heat.

Season the soup with salt, pepper, paprika, onion powder, and garlic powder.

Crumble the reserved bacon and add it into the soup.

In a separate cup, mix 3 tablespoons of cornstarch with 3 tablespoons of water and add the mixture into the soup, mixing well.

Gradually add 1.5 cups of shredded triple cheddar cheese and let the soup simmer on low heat for about 5-10 minutes, stirring consistently.

Serve the soup, topping with more cheese, bacon crumbs, and green onion.
