Preheat oven to 200°C fan.

Add red onion, red pepper, diced garlic, olive oil, salt and pepper to a glass baking dish.

Mix that all together and pop that in the oven to roast for 10 minutes.

Stir in smoked paprika, cumin, oregano and chipotle paste.

Add red lentils, black beans, chopped tomatoes and stock.

Cover tightly with foil and bake for 25 minutes until lentils are tender.

Remove foil, stir, then stir in the grated cheddar and scatter mozzarella over the top.

Return to the oven uncovered for 8–10 minutes until bubbling and golden.

Serve into bowls with chopped pitta bread for dipping, guacamole, cherry tomatoes, spring onion, and fresh coriander.
