Directions

  1. 1Combine 2/3 cup of melted and cooled butter, 2/3 cup of brown sugar, 2 teaspoons of vanilla extract, and 1 egg together.
  2. 2Whisk 4 tablespoons of cocoa powder into 1 cup of flour.
  3. 3Add the flour mixture to your wet ingredients and combine.
  4. 4Transfer the mixture to the bottom of an 8x8 prepared pan.
  5. 5Press the crust firmly into the bottom, making sure it extends to reach all the corners.
  6. 6Combine 2 cups of shredded coconut, 1 can of sweetened condensed milk, and 1 teaspoon of vanilla extract.
  7. 7Once combined, get that second layer on top of the crust.
  8. 8Spread this around and make sure all of the crust is covered.
  9. 9Bake in the oven at 350 degrees Fahrenheit for 30 minutes.
  10. 10Let them fully cool in their pan on a wire cooling rack.
  11. 11For the frosting, combine 1/4 cup of softened butter, 2 cups of powdered sugar, 3 tablespoons of milk, 3 tablespoons of cocoa powder, and a healthy splash of vanilla extract.
  12. 12Mix well, keeping milk nearby in case you need to add an extra teaspoon or two.
  13. 13Scrape the bowl down well, as this is meant to be a very thick, stiff frosting.
  14. 14Make sure the base is entirely cool, then spread the frosting on top.
  15. 15Chill in the fridge for at least an hour before cutting.
  16. 16Remove the squares from the pan using the parchment paper.
  17. 17Cut the cooled squares into individual servings.

Tips
