Eggnog Cranberry Scone

Directions

  1. 1Whisk together flour, baking powder, and granulated sugar in a large mixing bowl until combined.
  2. 2Grate cold butter directly into the dry mixture using a cheese grater.
  3. 3Use your hands or a pastry cutter to gently toss and rub the butter into the flour until it forms a mealy, crumbly texture with pea-sized pieces of butter throughout.
  4. 4In a separate small bowl, whisk together egg and eggnog until smooth.
  5. 5Pour the egg-eggnog mixture into the dry ingredients and stir just until the dough comes together.
  6. 6Fold in chopped fresh cranberries and white chocolate chips. Do not overmix.
  7. 7Turn the dough onto a parchment-lined baking sheet and gently pat it into a 9-10 inch circle about 1.5 inches thick.
  8. 8Cut into 8 scones (triangles or squares).
  9. 9Brush the tops with heavy cream.
  10. 10Bake at 350°F for 22-25 minutes, or until lightly golden and baked through.
  11. 11Top with an eggnog glaze made by combining powdered sugar and eggnog.
