Directions

  1. 1Buy an unsmoked gammon joint and soak it in water for 48 hours before cooking.
  2. 2Add the gammon to a deep pan with onions, carrots, celery and ginger beer.
  3. 3Top up with water and bring to a boil on the stove. Reduce to a simmer for around 2 hours. Turn it over halfway through.
  4. 4Check the internal temperature with a meat thermometer. It should reach 75 degrees Celcius.
  5. 5With a sharp knife, trim off the fat and chop it up for the wildlife.
  6. 6Make the glaze by mixing brown sugar, honey, and mustard until smooth.
  7. 7Pour half of the glaze over the ham and brush it in. Bake in the oven for 15 minutes or use an air fryer.
  8. 8Add the remaining glaze and cook for another 15 minutes.
  9. 9Strain the liquid from the pot. This can be used as a liquid stock.
  10. 10Slice the ham and store it in a Tupperware box in the fridge for around a week. It can be also frozen for use in pies and soups.
  11. 11Deglace the roasting pan to get the juices from the glaze and pour it over the ham to keep it moist.
  12. 12Make sandwiches with the ham, bread, cheese, tomato, and mayonnaise.
