2Add mustard seeds, curry leaves, and asafoetida to the hot oil.
3Add diced potatoes to the pan.

6After 3-4 minutes, add green chilies, turmeric powder, and red chili powder.
7Sauté on low flame, then cover and cook.
8While potatoes are cooking, prepare the special masala: add cumin, whole coriander, black pepper, dry red chili, peanuts, and gram flour to a grinder.
9Grind all ingredients to a fine powder.
10After 3-4 minutes, remove the lid from the potatoes.
11Add the prepared masala (besan mixture) to the potatoes.
12Sauté on medium flame until the gram flour is well roasted and aromatic.
13Add fresh green coriander and mix well.
14Serve the Aloo Besan sabji.
