Cowboy Casserole

Directions

  1. 1Chop up a pound of bacon and cook it separately in a skillet.
  2. 2Once the bacon is about cooked, add a pound of sausage, a chopped onion, and a chopped bell pepper to the skillet and let it cook.
  3. 3While the meat and vegetables are cooking, chop up 3 pounds of red potatoes, making sure they are all around the same size.
  4. 4Once the sausage and bacon are cooked through, add a couple of tablespoons of minced garlic to the skillet.
  5. 5Add the chopped potatoes to the crock pot.
  6. 6Add black beans, corn, and tomatoes with green chilies to the crock pot.
  7. 7Add the cooked meat mixture from the skillet into the crock pot.
  8. 8Season the casserole with your preferred seasonings.
  9. 9Cook the casserole in the crock pot on high for a few hours until the potatoes are nice and tender.
  10. 10Once the potatoes are tender, add a few cups of cheese to the top of the casserole.
  11. 11Once the cheese is melted, serve and enjoy.

Tips

  • Ensure red potatoes are all around the same size for even cooking.
  • You can use hot sausage or any other type you prefer.
  • Feel free to change up the seasonings to your preference.
