Cabbage Steaks with Herb Butter

Directions

  1. 1Preheat oven to 425°F. Line a large rimmed baking sheet with foil.
  2. 2Trim stem off cabbage. Slice the cabbage vertically into 4 (1-inch-thick) steaks. Place the steaks on the prepared baking sheet.
  3. 3Brush both sides of the steaks with 2 tablespoons oil. Sprinkle both sides with ½ teaspoon pepper, ½ teaspoon onion powder and ¼ teaspoon salt.
  4. 4Chop fresh herbs and add them to a medium bowl.
  5. 5Add 4 tablespoons butter, minced garlic, 1 teaspoon lemon zest, 1 teaspoon lemon juice, 1 teaspoon Worcestershire, ¼ teaspoon crushed red pepper and ⅛ teaspoon salt to the bowl with herbs.
  6. 6Beat with an electric mixer on medium speed until fully combined, 30 seconds to 1 minute.
  7. 7Roast until tender and browned, about 45 minutes, flipping halfway through.
  8. 8Serve the cabbage steaks with a generous dollop of herb butter on top.

  • 0.25 teaspoon salt
  • 4 tablespoons unsalted butter
  • 0.25 cup finely chopped fresh tender herbs (such as basil, chives, dill and/or flat-leaf parsley)
  • 3 cloves medium cloves garlic, minced
  • 1 teaspoon grated lemon zest
  • 1 teaspoon lemon juice
  • 1 teaspoon lower-sodium Worcestershire sauce
  • 0.25 teaspoon crushed red pepper
  • 0.125 teaspoon salt
