White Chicken Enchiladas

Directions

  1. 1Add Monterey Jack cheese, shredded chicken, salt, pepper, and adobo seasoning to a mixing bowl, then mix.
  2. 2Fill tortillas with the mixture, roll up, and place in a 9x13 baking dish.
  3. 3Melt butter in a saucepan, then whisk in flour until thick.
  4. 4Add chicken broth and whisk until smooth.
  5. 5Add sour cream and whisk together.
  6. 6Stir in the diced green chilies, turn off the heat, and pour the sauce over the enchiladas.
  7. 7Cover with more Monterey Jack cheese.
  8. 8Bake at 350 degrees for 20-25 minutes, then broil for 5 minutes to get it nice and toasty.
  9. 9Let cool, then cut out an enchilada.
  10. 10Add hot sauce.
  11. 11Serve and enjoy.
