Add Monterey Jack cheese, shredded chicken, salt, pepper, and adobo seasoning to a mixing bowl, then mix.

Fill tortillas with the mixture, roll up, and place in a 9x13 baking dish.

Melt butter in a saucepan, then whisk in flour until thick.

Add chicken broth and whisk until smooth.

Add sour cream and whisk together.

Stir in the diced green chilies, turn off the heat, and pour the sauce over the enchiladas.

Cover with more Monterey Jack cheese.

Bake at 350 degrees for 20-25 minutes, then broil for 5 minutes to get it nice and toasty.

Let cool, then cut out an enchilada.

Add hot sauce.
