Directions
- 1Lay out skirt steak and use a mallet to make it thinner.
- 2Add a layer of manchego cheese, cooked chorizo, and chopped parsley.
- 3Roll it up, tie it off, and slice in between to make your pinwheels.
- 4Add salt, pepper, and garlic.
- 5Sear the pinwheels off over high heat.
- 6Flip them over to get an insane crust, then pull them to the cooler side to finish cooking.
- 7Once the pinwheels are done, pull them off and let them rest.
- 8Brown some garlic in a skillet.
- 9Deglaze with wine, add seasoning, lemon juice, parsley and olive oil.
- 10Add the sauce to the top of your steaks and slice everything up and serve.
