Directions

  1. 1Peel the papery part off the summer sausage and cut it into chunks.
  2. 2Place the sausage chunks into a baking dish.
  3. 3In a bowl, mix together 1/2 cup of apricot preserves and 3 tbsp of Dijon mustard.
  4. 4Pour the apricot preserves and Dijon mustard mixture over the sausage, ensuring it's in one layer.
  5. 5Bake in a preheated oven at 350°F for 45 minutes, until the sausage is browned.
  6. 6Skewer the cooked sausage pieces with toothpicks and arrange them on a serving dish.
