Directions

Peel the onions and slice them 1/4-inch thick using a mandoline.

Toss the onion slices in a bowl to separate the rings.

Mix salt, black pepper, smoked paprika, granulated garlic, dry mustard, brown sugar, cayenne pepper, and fresh thyme leaves in a bowl.

Add olive oil to the onions and toss to coat.

Add half of the spice mixture to the onions and toss.

Add the remaining half of the spice mixture to the onions and toss again.

In a greased 13x9 baking dish, add a first layer of the seasoned onions.

Spread 2 oz of the grated cheddar and 2 oz of the grated gruyere cheese over the onions.

Add another layer of onions, then top with the remaining 2 oz of cheddar and 2 oz of gruyere cheese.

Sprinkle the pecorino romano cheese over the top and dot with the small butter pieces.

Cover the dish tightly with foil and bake at 350 degrees for 45 minutes.

Remove the foil and bake for another 30 minutes.

3 lb sweet onion, peeled, sliced 1/4-inch thick
2 tsp salt
1 tsp black pepper
1 tsp smoked paprika
1 tsp granulated garlic
1 tsp dry mustard
2 tsp brown sugar
1/2 tsp cayenne pepper
1 tsp fresh thyme, stripped
2 tbsp olive oil
4 oz Tillamook mild cheddar cheese, freshly grated
4 oz gruyere cheese, freshly grated
1/2 cup pecorino romano cheese, freshly grated
3 tbsp butter, cut into small pieces

Tips
Slice the onions thin on a mandoline so they melt and become silky instead of crunchy.
You can use either light or dark brown sugar.
Instead of pecorino romano, you could use parmesan reggiano or even grana padano.
