1Prepare the meatball mixture: In a large bowl, combine ground chicken, Parmesan, breadcrumbs, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined but don’t overwork the meat.
2Shape the mixture into small balls (about 1-2 inches in diameter).
3Heat olive oil in a large skillet over medium heat. Fry the meatballs, turning occasionally, until golden brown on all sides and cooked through (about 10-12 minutes). Remove the meatballs and set aside.
4In the same skillet, add butter and sauté garlic until fragrant (about 1 minute).
5Pour in the heavy cream and bring to a simmer. Add salt and pepper and cayenne pepper to taste.
6Add spinach and mix well. Stir in Parmesan cheese until melted and smooth. Add a pinch of red pepper flakes.
7Return the meatballs to the skillet and spoon the creamy spinach sauce over them. Let them simmer for 2-3 minutes to absorb the flavors.
8Serve hot, with your choice of pasta, rice, or bread to soak up the creamy sauce.
