Moisten the bench with a spray bottle of water and lay out the rice paper sheets.

Spritz the rice paper sheets generously with water.

Place filling onto the moistened rice paper.

Fold the rice paper to enclose the filling, ensuring there are a few layers of paper on both sides of the dumpling.

Arrange the dumplings in a large frying pan with oil and cook over low-medium heat until crispy and cooked through.

300 g peeled, raw deveined prawns
2 clove garlic
2-3 cm ginger
2 small spring onion
1 pinch white pepper
1/4 tsp salt
1/2 tsp sugar
1 tsp GF soy sauce
1 tsp sesame oil
1/2 tsp GF oyster sauce
1 tbsp corn starch
rice paper
water
oil
Equipment
spray bottle
large frying pan
Tips
Microwave a small spoonful of the filling before using it to taste for seasoning.
Ensure the filling mixture is not too wet to help the dumplings get crispy.
Do not use high heat as it may cause the dumplings to burn or burst.
Serve with a soy vinegar dipping sauce, chilli oil, and fresh spring onions or herbs.
