Directions
- 1Prepare the lavender sugar by whisking sugar with lavender.
- 2Slice the peaches.
- 3Sprinkle the sliced peaches with lemon zest and lemon juice.
- 4Sprinkle the sliced peaches with lavender sugar.
- 5Roll out the puff pastry on a baking sheet lined with baking paper to the desired thickness.
- 6Score borders all around the dough using a knife.
- 7Prick the middle of the dough with a fork and refrigerate until later.
- 8Arrange the peach slices on the prepared dough.
- 9Sprinkle more sugar on top of the peaches.
- 10Brush the edges of the dough with egg wash (one egg whisked well with 1 tablespoon of water and a splash of vanilla).
- 11Bake the pie in a preheated oven (200°C) for 15-20 minutes until puffy and golden.
- 12Serve with a drizzle of lavender honey.

Tips
- Whizz the sugar with the lavender in your food processor once to get the maximum flavor of the lavender.
- For the honey, warm it with the lavender before drizzling.
- Make sure the bottom of the pie is cooked as well when baking.
