Don't be afraid to spice the chicken generously, as these spices create all the flavor at the bottom of the pan.
Don't be afraid of a nice char on the chicken; it's not burnt, it's flavor.
Make sure to scrape the pan to unlock all the flavor while cooking onions.
The only salt added is in the pasta water and on the chicken at the beginning.
When the fettuccine is almost done, add it to the sauce and watch it slowly soak up all the sauce.
