Serves 1

Directions

  1. 1Spray a 9x13-inch casserole dish with nonstick cooking spray.
  2. 2Line the casserole dish with parchment paper so that there’s about an inch overhang on the long sides.
  3. 3In a large bowl combine the rice chex and rice krispies, breaking up the chex a bit as you mix.
  4. 4Add butter to a large saucepan or skillet and cook on medium, until browned bits begin to form on the bottom and the milk solids mostly evaporate.
  5. 5Add the brown sugar and heavy cream to the saucepan and whisk until emulsified.
  6. 6Let it cook for 3-4 minutes until it’s a thickened caramel sauce.
  7. 7Reduce heat to low, add the salt and 16oz package of marshmallow, whisking until melted.
  8. 8Pour the salted caramel marshmallow sauce into the cereal and give it a rough stir.
  9. 9Add the remaining 1/2 cup mini marshmallows and stir until the cereal is well and evenly coated.
  10. 10Pour mixture into the prepared pan.
  11. 11Use another piece of parchment paper to really press the treats evenly into the pan.
  12. 12Decorate with sprinkles if desired.
