No Bake Brownies & Cream

Directions

  1. 1Prepare the Ghirardelli brownie mix according to box directions, using milk or coffee instead of water, and adding a little vanilla extract and espresso powder (measured with your heart).
  2. 2Set the prepared brownie chunks aside.
  3. 3Mix one block of softened cream cheese and one cup of granulated sugar until smooth.
  4. 4Add a teaspoon of vanilla extract (measured with your heart) to the cream cheese mixture.
  5. 5Add approximately half of one cup of whipping cream to the cream cheese mixture and mix for a bit.
  6. 6Add the remaining whipping cream, scrape the bowl down, and mix again to create the base.
  7. 7Spread this cream cheese base out to ensure the bottom of the pan is covered.
  8. 8Dump half of the brownie chunks mixture on top of the cream cheese base, creating a layer of chopped brownies.
  9. 9Set the pan aside.
  10. 10In the same bowl, mix two cups of whipping cream and one box of vanilla pudding powder (alternatively, use a tub of frozen whipped topping).
  11. 11Do not let the mixture get entirely structured; it should be stabilized but still have a little free movement for spreading.
  12. 12Spread this pudding mixture as the next layer.
  13. 13Add the rest of the brownie pieces as the next layer.
  14. 14Add another two cups of whipping cream and another vanilla powder, mixing without overdoing it to allow for easier spreading.
  15. 15Spread this final layer, pressing down forcefully to compress it into shape.
  16. 16Refrigerate for at least one to two hours before tasting.
  17. 17Refrigerate for a couple more hours before serving to others.
  18. 18Drizzle with caramel or strawberry (or desired topping) and decorate with chocolate or candies if desired.

Tips

  • This recipe is intended to feed a crowd; for a smaller crowd, cut the recipe in half.
