Cinnamon Sugar Cheesecake Cookies

Directions

  1. 1In a medium bowl beat the cream cheese until smooth, add the powdered sugar and vanilla bean paste. Mix until fully combined and smooth.
  2. 2Scoop out 12 spoonfuls of mixture onto a small pan and place in the freezer for at least 30min or until frozen.
  3. 3Line a baking sheet with parchment paper and set aside.
  4. 4Microwave butter for about 30 seconds so it’s about half way melted.
  5. 5Beat the butter and sugars together for 1-2min and sugar is dissolved. Add vanilla and egg; mix until combined.
  6. 6Mix in the flour, baking soda, and baking powder until fully combined. Place in the fridge for 20min to chill. Preheat the oven to 350°F.
  7. 7Scoop out 12 equal size dough balls. With the dough ball in one hand flatten it using your other. Place the frozen cream cheese mixture in the center and fold the dough over so the mixture is completely hidden. Roll between your hands and drop into the cinnamon sugar mixture.
  8. 8Place cookies on the cookie sheet leaving about 2in between for them to spread. Bake for 9-11min or until edges are golden.
  9. 9Allow to cool on the tray for 5 minutes and then transfer to wire rack. Once cool you can dip in the sugar mixture for a little extra crunch.

  • 0.5 tsp vanilla bean paste
  • 114 g salted butter
  • 50 g granulated sugar
  • 100 g light brown sugar
  • 1 tsp vanilla bean paste
  • 1 large egg
  • 190 g all purpose flour
  • 1 tsp baking soda
  • 0.25 tsp baking powder
  • 67 g granulated sugar
  • 1.5 tbsp cinnamon
