One Pan Caramelized Onion Pasta

Directions

  1. 1Preheat the oven to 400F.
  2. 2Add the sliced onions, chopped sun-dried tomatoes, paprika, salt, pepper, and dried parsley to a casserole dish.
  3. 3Toss the ingredients together to distribute the seasonings.
  4. 4Place the whole garlic head in the middle of the dish.
  5. 5Drizzle the entire dish with olive oil or the leftover sun-dried tomato oil.
  6. 6Cover the dish with foil.
  7. 7Pop the dish in the oven for 1 hour, tossing halfway through.
  8. 8Prepare the pasta according to package directions about 20 minutes before the casserole dish is done.
  9. 9Reserve up to a cup of pasta water.
  10. 10Remove the garlic from the casserole dish and set it aside to cool down.
  11. 11Once the garlic is safe to handle, squeeze out the cloves into the dish.
  12. 12Add the fresh parsley, basil, lemon juice, and coconut milk to the dish.
  13. 13Add the cooked pasta and pasta water as needed.
  14. 14Stir everything together and enjoy!

  • 5 null small yellow onions, sliced, or 3 large
  • 1 null head garlic, top sliced off
  • 0.5 cup sun dried tomatoes, chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp paprika
  • 1 tsp dried parsley
  • 0.5 cup coconut milk
  • 3 cups farfalle pasta, cooked
  • 1 handful fresh parsley, chopped
  • 1 handful fresh basil, chopped
  • 1 null lemon, juiced

Tips

  • If using sun-dried tomatoes in oil, use that oil to drizzle over the onions before cooking.
  • You can use a different type of pasta of a similar size or gnocchi.
  • For a gluten-free version, swap for gluten-free farfalle.
  • If you don’t like coconut flavor, substitute coconut milk with cashew cream or soy cooking cream.
  • To add more vegetables, include a cup of frozen vegetables or wilting greens.
