Preheat the oven to 400F.

Add the sliced onions, chopped sun-dried tomatoes, paprika, salt, pepper, and dried parsley to a casserole dish.

Toss the ingredients together to distribute the seasonings.

Place the whole garlic head in the middle of the dish.

Drizzle the entire dish with olive oil or the leftover sun-dried tomato oil.

Cover the dish with foil.

Pop the dish in the oven for 1 hour, tossing halfway through.

Prepare the pasta according to package directions about 20 minutes before the casserole dish is done.

Reserve up to a cup of pasta water.

Remove the garlic from the casserole dish and set it aside to cool down.

Once the garlic is safe to handle, squeeze out the cloves into the dish.

Add the fresh parsley, basil, lemon juice, and coconut milk to the dish.

Add the cooked pasta and pasta water as needed.

5 null small yellow onions, sliced, or 3 large
1 null head garlic, top sliced off
0.5 cup sun dried tomatoes, chopped
1 tsp salt
1 tsp black pepper
1 tbsp paprika
1 tsp dried parsley
0.5 cup coconut milk
3 cups farfalle pasta, cooked
1 handful fresh parsley, chopped
1 handful fresh basil, chopped
1 null lemon, juiced

Tips
If using sun-dried tomatoes in oil, use that oil to drizzle over the onions before cooking.
You can use a different type of pasta of a similar size or gnocchi.
For a gluten-free version, swap for gluten-free farfalle.
If you don’t like coconut flavor, substitute coconut milk with cashew cream or soy cooking cream.
To add more vegetables, include a cup of frozen vegetables or wilting greens.
